Food and drink are integral to hospitality industry, as is the safe handling of them. A celebratory occasion can quickly transform into a disastrous memory if your guests or customers find themselves suffering from food poisoning.

It’s very likely that nearly every ingredient in your kitchen (or your restaurant’s kitchen) has passed through many hands before it came to you. That means that there have been many opportunities for cross contamination.

Even fresh, clean-seeming ingredients could harbour an unexpected pathogen. One which could have devastating effects on your guests and your business.     It is so important that we push employees to do their food safety training before they commence employment. I am encouraged to see that you offer your courses in different languages. I now place it on the job spec that we are looking for staff who already hold this qualification.     I have recently taken on a management role within a large fast food company and the training in relation to Food Hygiene is fantastic. I worked in hotels previously and I did not feel they saw food hygiene as important. Hotels will allow students or new staff to work without the training, whereas these big fast food chains ensure it is done before staff go anywhere near food.

    We in the UK take Food Safety a great deal more serious than the rest of the EU. I have visited several EU countries and it is clear that the word ‘Food Safety’ simply means putting something in the fridge. The training, monitoring and policing of food safety is non existent. We need to push to ensure that the legislation that is in place across the EU is consistent.
